Apple Pie, Vegan, Delicious!


I have to say, I’m pretty impressed with this one. I never had much luck with pie crust, and especially without wheat flour. This pie crust is delicious and really simple to mix up.

You need:
2 pie crusts
apple pie insides

First make one pie crust:
1 1/4 cups kamut flour, or 1/2 cup kamut and 3/4 cup oat flour, or any ratio really–you can substitute spelt, brown rice flour or sorghum flour too–it also works great to use regular, unbleached wheat flour
1/4 tsp salt
1/3 cup almond oil is best, safflower and canola oil work well too
1/3 cup ice water (just the water, don’t let the cubes in)
Whisk the oil and ice water for while til thick. Sift the flour and salt into the oil mixture and mash with a pastry cutter just until it’s holding together. Now, lay a sheet of wax paper on the counter and dump the dough in the center. Work it with your hands a little to make a flat round. Put a piece of wax paper over it, and roll it out into a round that will fit your pie plate.

This is the exciting part. Pull off the top wax paper, get psyched, work your hand under the bottom of the wax paper and pie crust, and do a sudden, accurate flip into the pie plate!! If all goes well, you can now gently pull the wax paper off the top of the crust, and most of the crust will be in the pie plate and not too broken. Do some repairs to the sides by working it around like play dough with your fingers. If you have lost some on the counter, just scoop it up and work it into the sides of the plate too (that’s the part that usually is broken a bit, for me).

Now make your apple filling:
3 granny smith apples, peeled and sliced
3 red apples (with some flavor, not red delicious), peeled and sliced
1 Tablespoon lime or lemon juice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 Tablespoons kamut flour
1/4 cup maple syrup (or less if you want)
some raisins
Mix the lime or lemon juice into the apple slices. Combine the spices and flour in a small bowl, then mix into the apples. Mix the maple syrup and honey into the apples. Put the apples into the pie crust, and sprinkle raisins over them.

Now, make your second pie crust. Same as the first, just remember to get psyched when you flip it over the apples. Pull off the wax paper gently, and make any edge repairs you need to, gently. Hopefully this one works out, because you can’t repair much, but mine usually does. Make 4 slits in the top with a knife.

Bake your pie at 400 degrees until brown on top.
