Beth Rodden’s Vegan Banana Bread


3 overripe bananas
1/4 cup grape seed oil
1/4 cup sugar/agave syrup/maple syrup/honey/your choice
2 teaspoons lemon or lime juice
1/2 cup whole wheat flour (or any substitute)
1/2 cup oat flour
1/2 cup wheat germ
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 tsp baking powder
I like to add chocolate chips or raisins sometimes, and walnuts every time.

Mix up and bake at 350 in a square pan, or make muffins.
This is really good!

    I think for about 40 minutes, but make sure to check it. when the top is brown, it’s usually done.

    i even used oat bran because i couldn’t find oat flour and it came out great…i added gluten and dairy free choc chips too…this bread is amazing

    Thanks! This was fantastic! For the second batch I added 1/4 cup of all natural unsweetened cocoa powder and about a tbsp more oil and an additional tsp of baking powder to balance the acidity. Heaven!
