Daily Vinaigrette


I eat salad almost every night, often as my complete dinner, and it makes me wake up feeling great.
And I always make a vinaigrette dressing, which is really easy. I use a small marble mortar and pestle to crush the garlic, but a garlic press works well too.

1 or 2 cloves garlic, pressed
olive oil
apple cider vinegar (sometimes I use balsamic)
lime juice (just keep a bottle of pure lime juice in the fridge to make your life easy)

Put the crushed garlic in a small bowl and add a decent amount of olive oil. Whisk them together with a little wire whisk. (A lot of times I do this first and then let the garlic sit in with the olive oil while I wash the lettuce and make the rest of the salad.)
Add a similar amount of apple cider vinegar, and a dollop of lime juice, and whisk well. The vinaigrette should turn thick and creamy because of the lime juice.

When your salad is ready, hold the shreds of garlic back with the whisk, and pour the vinaigrette over the salad. Then toss.

    Bonjour, your vinaigrette looks too liquidy for me…
    Some salt and pepper.
    Either vinegar and lemon (lime) juice; let’s say a soup spoon…
    Three soup spoon of oil… I use one spoon of olive oil and two of another oil…
    This is my vinaigrette.
    Most of the time, I add crushed or minced garlic, and some “pistounade de basilic” (basil, garlic, crushed olive, chickpeas puree)  homemade.
    I use my pistounade de basilic a lot… on vegetable soup at the last moment when the soup is ready in your bowl or plate, on a toasted peace of good bread, actually it is so good that I use it daily; it is so tasty…
