Chocolate Chip Cookies: Vegan, No Sugar, can be No Wheat

These are GOOD! You will love them!

Chocolate Chip cookies

2 cups unbleached all-purpose flour or whole wheat pastry flour
(for wheat-free, substitute:
1 tsp xanthan gum
2/3 cup brown rice flour
2/3 cup sorghum flour
2/3 cup tapioca flour)
2 tsp baking powder
1 tsp baking soda
scant 1⁄4 cup honey/sugar/agave syrup/maple syrup/your choice
1⁄2 tsp sea salt
1⁄2 cup pure maple syrup
1⁄2 tsp blackstrap molasses
2 – 3 tsp pure vanilla extract
1⁄2 cup canola or grapeseed oil
2⁄3 cup non-dairy dark chocolate chips
walnuts

Preheat oven to 350°F (176°C). In a bowl, sift in the flour, baking powder, soda and salt, and stir until well combined. In a separate bowl, combine the maple syrup and honey with the molasses and vanilla, then stir in the oil until well combined. Add the wet mixture to the dry, along with the chocolate chips and walnuts, and stir through until just well combined (do not overmix). Place large spoonfuls of the batter on an oiled baking sheet and flatten a little. Bake. Eat!

    Um… Honey comes from PLANTS. Bees are just the vehicle for the transformation. They do what we do, take vegan ingredients, make something, it still comes out vegan. Plus, they don’t get hurt or anything. Bee Honey, technically is Vegan, regardless of what uneducated vegans will try to tell you.

    Chris, I myself am not a vegan, but some of my friends are and none of them would eat honey since bees actually make it. You say that they don`t get hurt when they make honey, well cows are also not slaughtered after they give milk, does that mean milk is vegan?

    I just made these… I added about 1/2 tsp of cinnamon, a dash of nutmeg and used almond oil. I baked them for about 7-10 mins…. and results:  OMG. SOOOO GOOD! Thanks so much for the recipe!

     There is a school of thought that the bees can be harmed if too much honey is taken. They do, after all, make it to feed their larvae and the queen. Some people believe that colony-collapse-disorder is connected to commercial beekeepers taking honey and replacing it with sugar water.
