Potato Leek Soup: Vegan


This soup is ridiculously good. And simple.

6 tennis ball sized white potatoes (or any equivalent in size and color), washed but not peeled, and diced
2 large leeks, both white and most of the green parts
1/2 yellow onion
2 cloves garlic
2 Tablespoons olive oil
3 Tablespoons white wine, if you have some
1/2 tsp thyme (fresh would be better)
1/2 tsp rosemary (fresh would be better)
4 cups vegan bouillon (that’s 4 cups of hot water with 2 cubes dissolved in it)
2 cups water
1 tsp salt, or to taste
fresh black pepper to taste
1 cup plain soy milk (make sure it is truly plain!)

Rinse the leeks and slice them thinly. Dice the potatoes. Heat the oil in your large stockpot, saute the leeks for a few minutes. Add the wine if you have it. Saute the potatoes (take care they don’t stick) and onion and garlic.
Add the bouillon, water, salt and herbs. Simmer until the potatoes are very soft, about 20 minutes. Add the pepper.
Use your stick blender to blend it, or a countertop blender.
Stir in the soy milk.
Adjust salt and pepper to taste.

    try it with tarragon instead of thyme…(my daughter did by accident…my herbs aren’t always labeled :) ~wow! I’m making this again for Thanksgiving.

    Yep, this is a winner. Easy to make and tasty. I didn’t have a stick blender on-hand and didn’t feel like going to a countertop blender with it, so I just used a masher to break it down some. I enjoyed the chunkiness (though I plan to try it blended when I can). Thanks!

    I am seriously considering veganism, and I was wondering what type of stores carry vegan altenatives, like vegan bouillon? Im from Ogden, Utah, so also if you know any good ones around let me know!

    do you go to Salt Lake? there are some great Whole Foods stores there. most big grocery stores (Smiths or City Market) will have a natural foods section with lots of great choices, and definitely vegan bouillon.

    The Sunflower Markets in Salt Lake City are pretty great, too. The Cakewalk Vegan Bakery and Grocery (in SLC) carry some pretty hard to find soy cheeses that are pretty good substitutes in lots of recipes!

    So delicious! I just made it, so easy too. I used plain unsweetened almond milk instead of soy. Next time I may try leaving some of the cubed potatoes out of the blender to make it more like (un)loaded baked potato soup.

    yum, that is a great idea! I made this last night, but substituted roasted red peppers (two of them, roasted in my toaster oven) for the leeks (because I didn’t have any leeks), and it was great :)

    I only had 1 leek so instead of halving the recipe i added 1 cup of mushrooms instead. I didn’t have thyme either so i replaced it with a mixed herb. I also didn’t read the recipe properly and boiled the potatoes – then i just drained them and fried the for a bit before adding the boullion etc. Also (last one) I didn’t have white wine so I just put in 1 tablespoon of the white wine vinegar I had for a bit of flavour. Yumm!
